how do u accelerate during grunty racing in mutation

its how fast the gruny can gain speed. but it also slows down when you hit something

You can't excelerate but you do get faster if you don't run into people running around the root towns. The best time to do the grunty racing is after you beat Cubia in Mutation. Because the root town are empty. However the downside is you can't leave the Lambda server.
