Video game with the best OST/Excluding .hack
For me I'm a big fan of Silent Hill 2. I'm a huge fan of Piano and violen solos. <3

Final Fantasy.............Hands down! The instrumentalists and Nobou Uematsu total rule game OSTs with their music.
Not to mention the singers such as Sweetbox, Rikki, and Koda Kumi.

Katamari. Sure, it doesn't have Koda Kumi, Hikki (Utada Hikaru), Tsukiko Amano, or anyone else like that, but the music in that game was awesome.

hmm, let's see here...
Lylat wars is an awsome old school OST, especially starwolf's theme song.
Soul calibour is alright, but too much for my taste.
Kingdom hearts 1 and 2 are both excellent, but only if you pick out like one or two songs from them(listen to the japanesse version of under the sea and you will see why it is not soo good)
Legend of zelda's OST's are always instant classic's, simply for their simplistic nature yet their abilitiy to easily convey the area, as well as the current theme/mood of the situation.
Halo OST=awsome. It has some song's on there which are rock(as in the type of music) and for the most part you can't deny the awsomeness of the main theme-the gregorian monk music which then lead'sthe violin music, and then on the halo2 ost, the mjolnir mix, which starts off with the gregorian monk music, before leading into an awsome electric giutar version Of the original theme song.
But the best song out of any other song from a game=
TETRIS THEME SONG!

The Japanese KH2 songs arn't that good, but overall Sanctuary, Simple and Clean, and some area music is great.

I would have to say The Legend of Zelda: Majora's Mask or Ocarina or Time. I dont know anyone that didnt love the small symphonies demonstrated by the Ocarina nor the other various instruments in those Zelda's sagas. (Like Elegy of Emptiness)

Devil May Cry had music to match the game but it wasn't deep meaningful music (though I'll admit the devil's cry from DMC3 was good). I am however excited for DMC4's.
Also has anyone seen the list of famous composers for Super Smash Bros. Brawl? Even Nobueo Amatsu (I can't spell today) is even helping. From what I hear there full be full vocals in latin supported with orcastra.

The calm, soothing blends of Shenmue's OSTs, IMO, are a must for any dedicated video game OST collector to obtain. The rarity would be enough, yet the quality merely amplifies the desire. The flawless, uniform harmony of Chinese and Japanese music, from flutes to bells, chimes to whistles, violins to pianos..beauty to beauty. Blended with the feelings of reminiscence, and temporary respite, it is enough to have even the darkest of hearts open to the light of the music. It's a small piece of perfection, in an imperfect world. Shenmue itself, while not recieving high acclaims due to lack of popularity, was one short series that I cherish even now. Ryo Hazuki, and his journey to avenge his Father..it's epic to say the least.
