Balance gameplay in general. No game is perfectly balance, but still. MW2 is so unbalance with those perks.

I was targeting multiplayer, but even in single player RPGs somethings can be overpowered. Ever heard of Wild ARMs 4? I can talk about what I like about games for hours, but I'm going to make it short and dry.
1. Visuals - A game without beauty in it's world isn't a game at all.

I forgot to add a few things to my list;
If anything, I dream of creating a game set in a beautiful, ambient landscape, telling a gripping and emotional story, with an element of choice that's unlike anything that existed before it.
Creating characters that enhance that environment and invoke numerous strong feelings in the player - on par with that of an actual human - would also be a must for me.
The real challenge would be in trying to create a game environment in which existed not AIs with set speech patterns, but 'Human' AIs, capable of thinking and feeling and reacting within their environment in a way that an actual human would...

- Replay value - mostly as a bonus
- Extra gameplay once the main game is over
- A well thought out storyline that provides the gamer with information that's easy to digest, while also explaining the history of the land that is being played in - As long as this fact is fulfilled, then I don't care how generic the plot may be.
- Level Design - My main reason for loving Shadow of the Colossus; Not only the landscape itslef, but also the fact that the Colossi are - quite literally - moving parts of that very same environment.

Airships. This is just one of many reasons why Skies of Arcadia is one of the best JRPGs thanks tot he large focus on them actually being relevant at some points in the plot beyond "YAY THE ONE SHIP WE TRAVEL ON."

Things every good game needs. This mostly applies to RPGs since I've never seen very many other genres pull off the first category:
A well told story with good character devellopment. I'm sorry, but the plot of a Final Fantasy game just doesn't cut it. I need something deeper. You don't go on a huge journey and fight countless battles just to return home the same person you always were. Also, main character be damned, I want the supporting cast to get just as much screentime and have just as large a plot relevance. As well, good voice acting helps get the emotions across.
Good music: One of the things that turns me off some games is their musical scores. Even amazing games with overall great scores can have the odd bad piece of music. If I may use the example of Tales of the Abyss for a moment: Its good songs were great, had awesome gameplay, good story, but I found myself muing the game at some parts simply since the music was annoying.
Balanced Gameplay: Let me use a little example of a game I dislike for a moment: Final Fantasy VII is just one example of a game with an overpowered main character. I'm sorry, but the main character shouldn't have 2x the HP, hit 5x harder (At level 50, Cloud was hitting for 5000 while the rest of my tea was hitting 800) and still be a better mage than most of the remaining party members! Many gamers are obsessed with making their main character some kind of god among men, and honest to god, it sickens me that it's not about planning on how to win as a team but just about keeping the main character healed. Ugh.
Things we can do without:
Graphics: Modern gamers care way too much for graphics, which game develloppers know and pump out bad games that look nice, which gamers lap up. This mentality of "I won't play it if it doesn't have the best graphics" needs to burn along with some of the bad games this has spawned. If graphics don't hurt my eyes, I can play the game, and hey, I grew up with the NES through the N64, I know all about bad graphics, but those games are still often more fun than some newer games.

I can live without voice acting, though. Also, poor voice acting is worse than none at all x_x
I never really got in games for the music till some time ago. I only started to pay atention to the music when playing Digital Devil Saga (in which the music rocks on most of the game). Have you read the example I gave for Wild ARMs 4 about a week ago on this same topic? Well, I've never played Wild Arms myself, and there was one piece of music in TotA I absolutely hated (It was a town theme... Belkend maybe?) hence why I used it as an example, because using an example from something I like is less likely to get me flamed than something I don't.
